Mach number is defined as the ratio of an object's speed to the speed of sound in the surrounding medium. Because sound travels via molecular collisions, the speed of sound varies with air temperature and altitude. At standard sea level (15°C), Mach 1 is approx. 1,225 km/h (761 mph), but at high cruising altitude (36,000 ft / -56°C), Mach 1 drops to approx. 1,062 km/h (660 mph).
Historically, sailors threw a wooden log attached to a knotted rope behind their ship. As the ship moved, a 30-second hourglass counted while the sailor counted how many knots passed through their hands. The number of knots counted gave the ship's speed in nautical miles per hour.
